Coffee Coffee Cake Recipe featuring Two Rivers Coffee + GIVEAWAY!




Hey! Welcome to A Sampling Bee! When I think of my morning cup o' Joe, I think of warm coffee cake with a sugary streusel topping. A hot cup of coffee and coffee cake just goes so well together.  I wanted to share with you one of my favorite coffee cake recipe. This is something that I enjoy on a lazy Sunday morning with my family. This isn't your ordinary coffee cake because this amazing cake is made with actual coffee!

Two Rivers Coffee Company makes the best coffees for this recipe. I chose Java Factory Roasters' "Wakey Wakey" as the flavor to use for this recipe. Wakey Wakey is a light roast coffee that had offered the best balance of flavor without overpowering the other ingredients in the recipe. As a stand-alone cup of coffee, Wakey Wakey is a smooth coffee that offers a pleasing nutty aroma and coffee house atmosphere. Wakey Wakey  has a light taste that does not leave you running for the sweetener. Enjoy it black or add some creamer!


Two Rivers Coffee Co. makes an amazing variety of coffees. They have a coffee for everyone. Choose from light roasts, medium roasts, dark roasts, flavored coffees, seasonal coffees and decafs. Now, time for some deliciousness!

Coffee Coffee Cake
Ingredients
Cake:
3 1/3 Cups all-purpose flour
1 1/2 tsp salt
2 tbsp. baking powder
1 tsp baking soda
3/4 cup buttermilk
3/4 cup COLD TRC's coffee(Any flavor. I used Wakey Wakey from Java Factory Roasters)
2 tsp vanilla
1 1/2 sticks unsalted butter, softened
1 3/4 cups white sugar
3 large eggs
Streusel:
3/4 cup walnuts or pecans; finely chopped
3/4 cup white sugar
1 tsp cinnamon
1 tsp coffee grounds; optional
Glaze: (Optional)
1/4 cup TRC's coffee
2 1/2 cups sifted powdered sugar

Tools:

Bundt pan, stand mixer or hand mixer, a few large bowls, spatula.

Directions:

1. Brew one coffee k-cup in your Keurig or other coffee brewer. Let cool in refrigerator.
2. Mix together streusel ingredients and set aside.
3. In a separate bowl, mix together all of the dry ingredients(flour, salt, baking powder, baking soda).
4. Combine 3/4 cup coffee with buttermilk and vanilla. Whisk together and set aside.
5. Preheat oven to 350 degrees. Lightly butter bundt pan and dust it with flour.
6. Using a stand mixer or hand mixer, beat the butter and sugar together until they're light and fluffy. Then, add the eggs one at a time, mixing in between each egg.
7. Next, incorporate the dry ingredients with the wet ingredients. Following this order(stir in between each step): 1/3 dry mix to creamed butter, 1/2 liquid(coffee & cream)to creamed butter, 1/3 dry mix, rest of liquid the remaining wet mix, the remaining dry mix. Mix well scrapping the sides on the bowl to make sure ingredients are well combined.
8. Pour half of batter into bundt pan. Add streusel next in a even layer. Then top with the rest of the batter.
9. Bake for 1 hour or until toothpick comes out clean.
10. Cool cake for 10 minutes on a rack. Slide a butter knife around the sides of the cake to loosen it a bit. Set on dish.
11. Allow cake to cool completely.
12. Glaze your cake(optional). Mix sifted powdered sugar and coffee until smooth, then drizzle over cake. Let glazed harden for a few minutes then serve immediately. Enjoy!

My Thoughts

The Coffee Coffee Cake recipe may seem hard at first, but it's really easy. After taking one bite, you'll be hooked forever! The Java Factory Roasters Wakey Wakey Coffee worked very well in this recipe.The coffee flavor wasn't overbearing. Using Wakey Wakey really woke up the flavor of the cake that complimented the other ingredients to accent the recipe and complete the cake.  Adding the ground coffee to the glaze really made the flavor pop. The coffee is truly the star of this recipe. Pair this Coffee Coffee Cake with a brewed cup of Wakey Wakey.

The Light Roast Variety Pack contains 8 different smooth flavored coffees.  I enjoyed every light roast and decaf flavor. But, my favorites are Wakey Wakey, BBR's Breakfast Blend, Pier 3 Decaf and Hamilton Mills Morning Roast. The k-cup labels are very colorful and easy to read. The aroma from the coffee filled our kitchen in a warm and inviting way. Perfect start to our morning.





This amazing k-cup tray hold 36 of my favorite coffee k-cups. I love having all of my favorite coffees displayed in a drawer that easily slides in and out. It's so convenient. My Keurig sits on the top of the tray, on top of a nice, soft foam piece. I love this feature because it saves so much room on my countertop. The tray is well made and its very easy to clean.

This monthly snack subscription box contains 5-8 Paleo foods and snacks. Items included range from sweet snacks, savory snacks and ingredients. Paleo By Maileo's promise is that they guarantee that every item in their boxes are 100% paleo- grain free, additive-free, refined sugar-free and dairy-free. The majority of the items in this month's box are new to me.


What's inside the Paleo By Maileo Subscription Box?



Naturally More Roasted Almond Butter contains probiotics and flax. This almond butter has 6 grams of protein and only 3 grams of sugar. I love the convenient pouch that this almond butter comes in. I can enjoy it right out of the pouch, or I can squeeze it onto toast, crackers or onto a banana. Naturally More's Almond Butter is a little bit crunchy, due to the flax seeds in it. This almond butter is smooth. It does not get stuck on the roof of my mouth. Very flavorful, with the slightest hint of sea salt.


Epic Venison Steak Sea Salt & Pepper Strips are gluten-free and are made with 100% grass fed venison. This strip has 8 grams of protein, 0 grams of sugar and 210 milligrams of sodium. The little nibble I got to have of this before my 3 year old took it from me was amazing! The venison is tender and very flavorful. Not overly salted like other jerky brands.



The Yes Bar Macadamia Chocolate Snack Bars are made with only the finest ingredients. They are free of GMOs, dairy, corn, gluten and soy. I can really taste the cherries and chocolate in this flavor. I am amazed by how many delicious fruits that are in just one of these bars. I love the added crunch from the sunflower seeds and macadamia nuts. I also love its chewiness.


Clean Sweets By Sasha's Carrot Cake Muffin looked amazing when I opened my box. But, when I opened the muffin packaging, I got this terrible rancid smell. Needless to say, Sasha's poor muffin went right into the trash can. It had an expiration date for 9/7/18. I took my photos before that date. I'd love the opportunity to work with this company so that I can have the privilege to try their muffins!


Nutiva Buttery Flavor Coconut Oil is vegan, non-GMO, organic, fermented and gluten-free. I love cooking and baking with coconut oil. I have used Nutiiva's Coconut Oil before but not the "buttery flavor." This flavor smells just like buttered popcorn. So, I made myself a nice big bowl of popcorn, and I drizzled this coconut oil onto it. Amazing! The buttery flavor is not salty. It has a light buttery flavor with a hint of coconut.


Jica Chips with a Chili Lime flavor, are made with olive oil. Jica Chips are made from Jicama which is an ancient Mexican root vegetable. These chips have an apple taste and a potato taste. This was my very first time trying these and I was surprised at how good they are! Jica Chips contain prebiotic fibers, which are good for our digestive systems. These chips are super crunchy. I love the Chili Lime flavor.


Casa de Sante Onion & Garlic Substitute Indian Spicy Hot Seasoning is good for all of your Indian recipes. This seasoning contains no onion or garlic. It is also gluten-free, salt-free and free from any preservatives, colors and flavors. I have not tried this seasoning yet, but it smells amazing!


Wild Planet Wild Sardines are skinless, boneless and they come in water. I have had these sardines before and they are really good. I love eating them right out of the container. They're good on pizza, too! A bit salty, but they're a healthy snack that I enjoy from time to time.


My thoughts

If you follow my blog, you should be able to tell that snack subscription boxes are my favorite! And, I can happily say, that Paleo By Maileo is one of my favorites! I really enjoyed all of the goodies in this box. I especially liked the Jica Chips, Coconut Oil and the Almond Butter. This is a subscription box that I would recommend to anyone. Even those who don't follow a Paleo diet. The snacks in this box are great for any to enjoy! This month contained a great variety of products. Most of which I will be buying at the grocery store.

September Degusta Box USA Review


 
 
Hey! Thanks for stopping by! September's Degusta Box USA is themed "Lunchbox." It's full of goodies that help me pack delicious, healthy snacks into my lunch or my son's lunchbox. Each month, Degusta Box USA sends me a box of 9-14 full-sized foods or drinks. Every month, the products are a complete surprise. My family and I enjoy opening it up together to see what we got. My kiddos immediately want to dig right into all of the yummy snacks.


Garden of Life makes delicious, simple protein bars that are Organic, Kosher, Vegan, non-GMO and gluten-free. These bars are made with clean protein. I got the chocolate sea salt flavor in my box. After taking my first bite, I was wowed at how soft and light this bar is. I can really taste the sea salt and the chocolate. I love how this bar is high in fiber and low in sugar. It's a really good protein bar.



Bauducco Chocolate Wafers are made with airy wafers and 3 layers of creamy chocolate. I use to eat these wafer cookies all of the time when I was young. So, I really enjoyed these. Brought me back to my childhood. I love enjoying these wafers with a hot cup of coffee.



SunRype Apple Strawberry Fruit to Go 100% Fruit Strips are made with only fruits and veggies. These fruit strips are my sons go-to for an after school snack. They're chewy, fruity and just so flavorful. My sons love these!



Hippeas Chickpea Puffs are an organic snack. These puffs are vegan, gluten-free, non-GMO, soy-free and nut-free. The puffs are super crunchy. The White Cheddar flavor is super cheesy. The Happenin' Hickory flavor has a smoky BBQ taste.

 


The Better Chips are whole grain chips that are made with fresh veggies and herbs. The flavor that came in this month's box was Jalapeno& Cilantro. Boy, do these chips have a spicy kick to them! I love them though because I love spicy foods. The Better Chips pair well with a cold guacamole or a slice of cheese.


Tiger Tail's Medium Style Mustard comes in a tube! This German recipe is made with stone ground mustard seeds, craft flavor and a bit of heat. I love adding this amazing mustard to the top of a hot dog! I really is a mustard like no other.



Handfulls Crrrunch Bites are half nut, half chip. The almonds are wrapped in a crispy rice cracker and they are just so good! This was my first time trying these and I was blown away. I really enjoyed the BBQ flavor.


Marion's Kitchen Kung Pao Meal Kit is a Chinese stir-fry that can be made in my very own kitchen. These meal kits are all natural and all I needed were a few ingredients in order to cook a yummy meal. The Kung Pao kit was a bit spicy and also sweet. I had a healthy meal cooked for my family in under 15 minutes. And, they loved it!


PB Crave makes the best flavored peanut butters. They are sweetened with real honey and they are made with real ingredients. In my box, I got 2 different flavors: Chocolate Chip Cookie Dough & Sweet & Dark Chocolate. I really liked them both. This peanut butter is really good on graham crackers.



GoCo Crunchy Coconut Bites are made with real coconut pieces. They are gently toasted and then pressed into bite sized discs. I really enjoyed these because they are very lightly sweetened. The bite size pieces are crunchy and contain chia seeds.


Idahoan Foods Mashed Potatoes are always stocked in my kitchen. These yummy potatoes are extremely easy to make. I enjoy eating them alone and as a side dish. I really enjoyed the new Classic flavor. The potatoes taste just like homemade. The Four Cheese flavor is one of my favorites.


The Chia Company makes pure, clean, sun ripened chia seeds. I really like the individual packages because it allows me to take the chia seeds on the go. I love adding the chia seeds to my yogurt or morning smoothie. Gives them a little added touch of deliciousness.



Mighty Spark Food Co. makes one of the nest tasting snack sticks. I was amazed by how moist, juicy and flavorful these sticks are. The cranberry flavor tasted just like cranberry and had chunks of cranberry and ginger in it. The jalapeno one could have been a little bit spicier. When I think of jalapeno, I think HOT! But, I loved that one, too! Only 60 calories per stick!


Marquis Citrus Yuzu is an energy drink that has zero calories and zero sugar! I normally don't like energy drinks, but I must say, I really enjoyed this one. It's light and fizzy!
 





 

My Thoughts

The September "Lunchbox" Degusta Box is my all time favorite. This box was just absolutely stuffed will all the things I love. Snack sticks, coconut, almonds, mashed potatoes, tortilla chips and peanut butter. My go to products from this month's box is definitely the chip coated almonds and the coconut bites! It had a great variety of snacks and a lot of the brands were new to me.
